Dinner is done…music to my ears when I’m busy with work!

During the week, not having to think what to have for dinner would be a godsend don’t you think?

What about having a delicious cooked breakfast waiting for you when you get up in the morning?

Well perhaps this little godsend is the humble, often cumbersome slow cooker.

Some of us have one tucked away in the back of the cupboard, out on the bench ready to crank up, others haven’t got one at all.

But there’s something satisfying about throwing everything in, slamming the lid on, switching it to low… knowing by the time you get home from work or wake up, food is ready!

Quietly humming away, ready and waiting for hungry mouths!

And the added bonus is the welcoming smell, wafting through the house.

Not bad at all!

Slow cooked food is also very nutritious, as long as you put pure ingredients in like bone broth, grass fed meat, vegetables, onion, garlic, ginger, herbs and seasoning… then you have yourself a very gut healing pot of gold!

Slow cooked food is gut healing because it’s very easy on our digestion, as the food is well broken down.  Our often already stressed body’s don’t have to work as hard to digest the food to get the nutrients it craves.

Therefore it far easier on our digestive systems, rather than dealing with a medium/rare steak of the bbq.

Slow cooking is actually an Italian thing, originating around 1980’s.

Think… long lunches under the grapevine in a Tuscan courtyard, happy raucous families, mopping up rich bowl fulls of lamb stew (which has been bubbling away in the kitchen since yesterday.)

I have to admit I got my 6-L Kambroock $48 slow cooker when I started doing my own bone broths.  But now I’ve taken it a step further to cook meals using bone broth.  From curries, roasts and now breakfast, you can cook just about anything in them.

Some of you have been asking for a recipe for an easy cooked breakfast (without having to waste time in the morning actually cooking it!

So here’s a delicious recipe which I love (by Dr. Axe.)

I use beef sausages instead of chicken (any good butcher has a range of sausages (without the fake fillers in them i.e. just pure meat.)

Crockpot Breakfast Casserole Recipe

Total Time: 6-8 hours
Serves: 4

Ingredients:

  • 12 eggs
  • 1/2 cup kefir (you can buy this at a health food shop.)
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup raw goat cheese, shredded
  • 1 cup raw sheep cheese, shredded
  • 1/2 cup green onions, chopped
  • 2 sweet potatoes, peeled and grated into hashbrowns
  • 1 pound chicken sausage, chopped
  • 1/2 cup bell pepper, chopped

Directions:

  1. In a bowl, beat eggs, kefir, red pepper flakes, salt and pepper. Stir in half the sheep cheese, half the goat cheese and half the green onions.
  2. In a medium bowl, mix together the potatoes, sausage, peppers and remaining cheese and onions. Add to slow cooker.
  3. Pour egg mixture over layers and cook on low for 6–8 hours.
